Swiss Chard and Goat Cheese Stuffed Baked Potatoes

I have a simple yet very delicious recipe coming ‘atcha tonight!  It involves baked potatoes, an easy side dish that almost everyone loves.


  • 2 baking potatoes
  • 4oz goat cheese
  • 4 cups Swiss chard
  • olive oil
  • salt


  1. Preheat oven to 400F
  2. Coat potatoes in olive oil and salt and place in oven to bake for about 1hr (may differ depending on your oven)
  3. Meanwhile, sautee swiss chard leaves in olive oil
  4. When potatoes are done (soft to the touch) cut down the center and stuff with sauteed Swiss chard and 2oz goat cheese to each

Yum.  The goat cheese makes everything so creamy and filling.  A good alternative to butter!

Oh by the way, remember when I was trying to decide whether to register for the A1A full or half marathon?  Well, A1A half here I come!  It’s a year away, but I’m excited to have something to train for in the future!

Time for some relaxation now!
