Sweet Potato Muffins

Today I have a great filling breakfast muffin recipe to share.

Breakfast IS the most important meal of the day.  I am so #TeamBreakfast .  If Team Breakfast had a jersey I would wear it. 

For the past year, Kyle and I have been enjoying baked oatmeal as our go-to healthy breakfast.  We also have waffles or shakes if I haven’t made oatmeal. 

However in the past few weeks a new healthy breakfast option has entered the arena – sweet potato muffins.  These were inspired by T ina at Carrots n Cake’s Morning Glory Muffins .  I add oats and molasses to mine for increased fiber and iron.
Sweet Potato Muffins
Ingredients:
½ cup mashed sweet potato
½ cup almond meal (almond flour)
½ cup oats 2 eggs ¼ cup dried cranberries ¼ cup molasses 1 tablespoon cinnamon 1 teaspoon baking soda 1 pinch salt
Directions: Combine all ingredients well.  If the mixture seems too moist add more oats.  Bake at 350 for 30 minutes. 
I store them in the refrigerator before eating and have two in the morning for breakfast.  I like to heat them up and eat them with a fork.  It makes it feel like more of a meal. Today's questions: Favorite muffin type…and GO!?!?! Love and vitamin A filled veggies, Carissa & Kyle

ps- I apologize that the pics on this recipe aren't stellar.  I really wanted to share it with you guys and didn't want to wait to have time to make them again. Eat them and you'll forgive me...I promise!
