If you have read my blog before you may have noticed that I have given it a little "facelift"! I thought it needed to be cleaned up a bit, I felt it was a little too busy before and wanted something a little classy and a little more me! My friend Sarah over at My (Mostly) Healthy Life recently had a bloggy makeover done and hers turned out great!!! So I contacted Caroline from Sweet Caroline Blog about giving my blog a little makeover as well. It has been something I have been wanting to do for a while, but since I am still relatively new to the blogging scene I didn't know where to start.
Caroline did an AMAZING job taking my ideas and colours schemes into consideration when designing my new blog, I personally love the end result! It is more crisp and clean and hopefully easier to navigate through... but I'll leave it up to the professionals to decide.... what do YOU guys think??
I was really excited about this week because Sarah and I started our 5 week Frosty Fitness Challenge ! Basically each week leading up to Christmas is a different challenge, and each week we are giving away a great prize to one lucky participant! (Check out the link above for all of the details and to join in!) This weeks challenge is to run a total of 20 km in 7 days, easy right?? Well I woke up Sunday with a killer cold, forced myself to run 3km anyways (which was a mistake) and haven't been able to work a full day yet because of how crappy I feel.... this is disappointing for three reasons...1) I really wanted to complete this weeks Frosty Fitness Challenge with my fellow participants 2) I had finally rekindled my love of weight lifting at the gym and have been super motivated lately 3) I had wanted to run the Whitby 5km this weekend but now I likely wont be well enough, I wanted to run it and try to get a new PB
That being said things could be way worse, and I am going to use the next few days to rest up so that I am ready to go for next weeks Frosty Fitness Challenge which will feature an awesome prize from Whooha Gear !!(pssst! if you use the promo code "ppp-whooha" you can get 10% off any item!) SWEET POTATO & CURRY SOUP
This recipe is awesome, and like all of my fav recipes, it is super easy to make. I got this recipe from my co-worker Val, not sure where she found it originally. It was love at first taste and is a recipe I always teach my nutrition students. Today I am going to switch the recipe up a bit. The original recipe calls for 1 cup of milk, however today I attempted to make it with coconut milk instead to keep it dairy free! (Please note: this recipe is not considered Paleo)
25 g of butter 1 large sweet potato chopped 1 small onion chopped 1 large potato chopped 1 1/2 tsp hot curry powder (I use 2 tsp)
3 cups chicken stock 1 cup milk (I used coconut milk) salt chopped chives (garnish)
Melt butter in a sauce pan add sweet potato, onion, potato and curry powder. Cook until onion is clear
Stir in stock, and bring to a boil Simmer until vegetables are tender Puree in a food processor of blender until smooth (I use a hand blender and do it right in the pot) Add the milk and salt reheat until almost boiling serve garnished with chives
