The family party I went to yesterday was a surprise party for my aunt’s 60th birthday. Oddly, Ben looks more surprised than her!
It’s No Surprise a Mexican party will have amazing Mexican food. I piled my plate high with everything. Rice, macaroni salad, beans, meat, pasta salad and rolls. I went back for seconds of everything It was homemade by my cousin – couldn’t resist!
It’s also No Surprise that I enjoyed a big piece of cake. My fam ordered a Costco cake and I’m a fan. Normally I like the cake part more than the frosting, but last night I was sneaking swipes of frosting every time I passed by the cake table! Tip: Order the whipped frosting, not the other one.
It’s No Surprise today is Pancake Sunday!
I took the pictures outside, but didn’t eat out here It’s just that my iced coffee cup is so BIG I need to get 5 feet away to get it in the shot!
In the pumpkin pancakes : 1/2c egg beaters, 1/4c pumpkin, 1/3c ww pastry flour, dash of each: salt, pumpkin pie spice, sugar, baking soda and baking powder. Blend. Cook. Eat.
I mixed a tablespoon of peanut flour into 2 tablespoons of syrup for the topping.
It’s no surprise Sunday is my rest day. That’s the way God wants it so I respect that
