Most people don’t eat enough fruits and veggies. One way of getting more veggies into your diet is preparing salads with raw ingredients. This Super Healthy Cabbage Salad is easy to make, can be kept in the fridge for up to 3 days and is VERY tasty. Try it!
1/3 cabbage, shredded
juice of ½ lemon
1 green apple (Granny Smith), grated and tossed in lemon juice
1 carrot, grated
1 red pepper, diced
½ cup dill, chopped
3 Tbsp white vinegar
1 Tbsp olive oil
1 Tbsp honey
salt to taste
In a big salad bowl, combine cabbage, apple, carrot, red pepper and dill.
In a small bowl, combine vinegar, olive oil, honey and salt. Mix well.
Pour over salad and toss.
1. Keeping the salad in the fridge for 2 to 3 hours before serving makes it even better.
2. This salad is great for a party, just double the recipe if you are expecting a big crowd.
