I hope your Friday went well! I just got back from a nice gym session--60 minutes on the arc trainer. My heart rate is already pretty much back to where it was before the surgery. It's crazy, because I adapted again so fast! Just a week ago, my HR was 182 on resistance 35. Tonight, it was 168 on resistance 50. Ha!
Sooo, remember how we were looking for a car for me in AZ, but it fell through? Well, my parents decided to turn in our "clunker" car and get a Honda Civic. They're picking it up tomorrow. Then I'll take the Honda Accord we already have to Arizona. It's great, cause it's a nice car and I'll finally have my own vehicle! But it also means I have to make the 3-day drive out to AZ before school starts. Not so fun! It'll be worth it to have a car, though.
So for lunch, I was having a falafel craving. I remembered we had Falafel Sunshine Patties in the freezer I had yet to try-- perfect!
I heated one up in the skillet for about 6 minutes on each side. Then I crumbled it into little balls and put them over a salad with Sabra Carmelized Onion hummus. The falafel patty was tasty, and not too "heavy" tasting like some falafel can get. The parsley flavor was a bit strong for me, but I like a very small amount of parsley. The falafel wasn't too dry, and it paired perfectly with the hummus. It was really flavorful and made for a great salad. I also loved the clean ingredient list. It was convient as well, because you can either heat it in the skillet or just microwave for a few minutes. If you love falafel and see this in your grocery store, I'd give it a shot!
My rating: A- (I'd love the parsley taste to be toned down a little, but that's just personal)
I love making it chocolately and spicing it up with unsweetened cocoa powder and cinnamon. Definitely not "bland" at all!
Then I went to Trader Joe's and bought out their greek yogurt (they only had 3 tubs!), and more muffins. I also got some yummy strawberries that I ate when I got back:
I just love fresh fruit :)
Dinner was a Goat Cheese, Hummus, Tomato & Basil Sandwich:

I loved it! We have a ton of basil from our plants and we definitely need to use it. This was a lovely summer meal--the goat cheese + hummus combo was perfectly creamy and bursting with flavor. I loved it so much, I had a corn thin with the same combo:
Excuse the zombie-esque hand. I think my white balance was a lil off ;)
