Sunday Night Stuffed Chicken

Sunday night dinner at my parents house is always something good, and what could be more comforting than mozzarella and pesto stuffed chicken breast?!

Then into a 350 degree oven for 20 minutes
On the side: mushroom and pepper couscous and roasted brussel sprouts!


Mozzarella and Pesto Stuffed Chicken:
  • 2-3 boneless, skinless chicken breasts
  • 1 cup of panko japanese bread crumbs
  • 5 slices of mozzarella cheese
  • 1/2 cup of store bought pesto
  • 1 tbsp of olive oil

  • Carefully butterfly the chicken breasts making sure not to cut all the way through. Spoon 2 tbsp of pesto into the chicken breasts and lay 2 slices of the mozzarella cheese. Use tooth picks to secure the breasts if you need to. 
    Coat the outside of the chicken breasts with the panko bread crumbs (skip this step if you want to save calories)
    Saute chicken breasts in 1 tbsp of olive oil until gold brown on both sides
    Healthier option: skip this step and transfer chicken breasts into a shallow baking dish and bake in a 350 degree oven for 35 minutes.

    Transfer the chicken breasts into a shallow baking dish and bake at 350 degrees for 20 minutes.
