Summertime Pasta Salad

Pasta salad is one of my favorite summertime dishes and can be varied according to preference. Easy to prepare, pasta salad is a great dish to accompany sandwiches on your next sunny summer day picnic. Certain variations, like the Black & Blue recipe below, are hearty enough for a main dish. **Use certified organic ingredients whenever available**

  • Box organic whole wheat pasta
  • Veggies (use what you have!), this adaptation contained:
  • 1-2 Tbsp . Oil (or use a vinaigrette dressing for easy flavor)
  • 1-2 Tbsp vinegar (can be omitted if using vinaigrette, just double amount of vinaigrette)
  • salt & pepper, to taste
  • Cook pasta according to package directions, drain and rinse with cold water
  • Dice all veggies in somewhat uniform pieces, add to large bowl along with drained pasta
  • Drizzle oil and vinegar (or vinaigrette ) over pasta and veggies
  • Season with salt and freshly ground pepper
  • Cover and refrigerate at least two hours, adjust seasonings according to preference and add more oil/vinegar if the salad is to dry. If using fennel, save some of the feathery tops to garnish salad with.

  • pepperoncini, sliced
  • tomato
Black & Blue
  • Blackened steak strips
  • blue cheese crumbles
  • red onion
  • tomato
  • olive oil
