Fall is officially upon us! Here in the Pacific Northwest, we were been blessed with a glorious summer! The best weather I can recall in recent years. It was lovely and I am sad to see it end. However, I am very much looking forward to scarves, boots, sweaters, and hot tea on cold nights. Not to mention pumpkins, fall color and blustery days.
Before we jump too far into fall, I want to wrap up summer with a recap of a camping trip we took to Lake Wenatchee for our anniversary in August. I had meant to share this weeks back, but time always seems to escape me! I sneaked in a couple easy and delicious camping recipes too!
Lake Wenatchee is a state park just outside of Leavenworth, WA. It is one of our most favorites spots. Pictures really can’t do it justice, but I still try.
Camping meals don’t have to be boring, or from a can. To make night of prep easy, we pre-packed all of our meals in zip lock bags (when necessary). Aside from being stupidly simple, this also helps to “marinate” the flavors before cooking. The meal below was the second of our three day camping trip (of course I forgot to take pictures of the other meals, but they included grilled vegetable quesadillas and Southwest Quinoa Salad ).
Fresh green beans, red onion and rosemary from our garden, with generous pepper, a pinch of salt and a drop of olive oil. Saute and done. Delish!
Sliced sweet potatoes, walnuts, cinnamon, pepper, coconut oil, and a dash of brown sugar. A perfect warm and hearty side for camping. This was our favorite!
And of course, our favorite protein, wild caught Northwest Salmon. Simply prepared with salt, pepper, and lemon slices.
This is Charlie, our Golden Retrievers, “I hate camping” face. She dislikes dirt. Spoiled? Check.
What’s camping without wine?! This is one of my favorite McMenamin wines. Plus, it’s the best wine label ever.
