Sugar Sugar, oh, Honey Honey [GIVEAWAY!]

Remember when I won some of the Tropical Traditions Raw Honey in a giveaway from Matt ?

It has quickly become one of my favored sweeteners. I’ve always liked honey; but up until I tried this raw honey, I don’t think I knew what real honey should taste like. I could eat this stuff off of the spoon.

Doing that with the stuff I had been using, and I’d probably have spat it out and declared hatred for honey.

I love using honey to make glazes for tofu…especially honey-mustard tofu “nuggets” with sweet potato wedges

…or Balsamic-Honey Tofu … (again with sweet potatoes…obsessed, much?)

…and honey-curry tofu (and, gasp, sweet potatoes?!)

But it’s great for baking, too!

I think all too often I grab the maple or date syrup, but honey is quite wonderful in breads…

Like this white whole wheat walnut loaf

…or in my most recent creation, Banana Honey “muffin tops!”

Muffin tops is only in quotations because I wanted something the size of muffin tops, but had no muffin top pan. So, I just blobbed them onto cookie sheets.

And now that I think about it, I have no idea why I didn’t just make them mini muffins. I guess I’m just a little dense…

…either way, these are fantastic. Super banana-y, but not your average banana muffin!

HealthyExposures

Banana-Honey Muffins/Muffin Tops

yields 14-16 tops or mini muffins

  • 1 c. quick oats
  • 1/2 c. + 1 T. almond meal
  • 3 T. white whole wheat flour
  • 1 t. baking powder
  • 1/4 t. salt
  • 1/2 t. cinnamon
  • scant 1/2 t. nutmeg
  • 1 1/2 ripe bananas
  • 1/4 c. raw honey
  • 1 t. vanilla extract
  • 1/2 t. almond extract
  • 2 T. canola oil

Preheat oven to 350*. In a large bowl, combine the oats, almond meal, flour, baking powder, salt and spices. Set aside.

In a separate small bowl, thoroughly mash the bananas until liquidy. Stir in the honey, extracts and oil. (Note: If the honey is solid, you’ll want to heat it until it is relatively runny.)

Fold the wet into dry until just combine. Drop spoonfuls onto greased/sprayed cookie sheets or mini muffin tins and bake 15 minutes. Allow to cool a minute or two on the sheets before transferring to wire cooling racks
