Stuffed Portobello Mushrooms & Red Hot Chili Peppers

I love experimenting in the kitchen, especially if it will help me use up some of my fresh produce before it goes bad. The other day I created my own version of stuffed Portobello Mushrooms with some items I had in my fridge and my cupboard.  I was pleasantly surprised with how yummy my supper turned out!

I began by hollowing out the mushrooms. I then grabbed a can of chicken. Yes, that right a can of chicken! The thought of using canned chicken threw me off at first, but now I always have a few cans on hand because it is so quick and convenient to use.

I buy this Kirkland brand at Costco

I drained the chicken and put it in a bowl.
I added 1-2 tbsp of organic honey
about 1/2 a cup cherry tomatoes (halved)
1 hot yellow pepper (I recommend only using half, unless you really love hot food!)
1 green onion

I mixed this all together in a bowl, stuffed the mushrooms with it a put them in the oven at 350 degrees for about 10 - 15 minutes. I also baked some eggplants, I gave them a light coating of olive oil and then sprinkled them with Parma Veg . This is how it turned out!


Not only did I make a dinner that included hot peppers, but last night I enjoyed a different type of pepper.... The Red Hot Chili Peppers!!!! Dan and I spent the evening rocking out to the Chili Peppers in T.O. they were amazing!!! Here are a couple of pics! Hope everyone is having a great weekend!
