After posting this blueberry chia seed jam , I told some of you that I would try using fresh instead of frozen fruit and guess what…? It worked!
Strawberry chia seed
2 cups fresh strawberries
1 1/2 Tbsp.
1 Tbsp. MoreFiber baking blend OR 1 packet white powder (80 mg extract)
Wash strawberries and removes the stems. Put them in a blender or food processor. Turn on the lowest setting and blend for about 20-30 seconds. Make sure to stop when there are still chunks of strawberries (do not puree). You can also mash the strawberries by hand if you do not have a blender. Pour strawberries into a container. Mix in stevia and chia seeds.
Let sit for a minimum of 1 hour to thicken up. You’ll get the best results when you let the jam sit overnight in the fridge. You can always make it thicker by adding more chia seeds but it will make the jam more “seedy.” I like the “jam” texture though (better than jelly IMO)… just make sure to check your teeth for chia seeds 
This jam is perfect on sprouted grain bread with peanut butter and avocado greek (and a few cacao nibs for crunch). This might even qualify as food art?! What do you think Jen ?
What was in that pudding you ask? Oh just chocolate, avocado, banana, greek … no big deal really.
I’m kidding… this is the BEST concoction of ingredients EVER. This definitely deserves more attention than at the bottom of this post.

The flesh of 1 avocado
1 FROZEN banana
1/3 cup plain greek yogurt
1/2 tsp. apple cider vinegar
2 Tbsp. unsweetened powder
1 tsp. (it’s getting hot in here)
NuNaturals vanilla stevia, 7 drops
Simply blend all ingredients until smooth!!
You can also turn this into AMAZING baby food by blending together the avocado, frozen banana and greek yogurt.
