Unfortunately, I’m still sick, but I plan to get a lot more rest today. Truth be told, it is very difficult for me to sit still. Even when I watch television, I’m usually also doing something else, such as blogging, reading, or organizing (it’s an addiction).
However, I was mostly good yesterday and allowed myself to rest up. Fingers crossed that I am able to sit still long enough today to do the same!
I’m hoping to feel much better by tomorrow afternoon because my mother-in-law is throwing me a baby shower. I’ll obviously give you a full recap on Monday.
Given the fact that I’ve been sick, I have not been too hungry, but even so, I do have some healthy foods to share with you from the past week.
Healthy eats from the week
Tofu pan-fried in a little sesame oil with raw honey and sesame seeds served over a salad
Tofu wrap with cantaloupe
IHOPSimple & Fit spinach, mushroom, and tomato omelet with fruit
Organic butternut squash soup and wrap
Sauteed chicken breasts with creamy chive sauceCrock pot buffalo chicken
Salad with romaine, red peppers, cucumber, red onion, baby beets, and corn kernels
Oatmeal with cinnamon and strawberries
Splurge of the week
Since I didn’t have a major splurge this week, this will have to do…
Starbucks pumpkin spice latte with soy milk (most likely the first of many this season)
The recipe for sauteed chicken breasts with creamy chive sauce was from Eating Well, and it was incredibly delicious! It tasted rich- even though it was healthy. Rather than using sour cream, I substituted plain Greek yogurt, but that was the only change I made to the recipe.
Oh and that is Michael’s plate in the photo above. I’m still on bad terms with broccoli.
