It is a pretty chilly morning here in Wichita Falls! I am not quite sure how we went from 91 degrees yesterday to 42 degrees this morning! But I honestly really enjoy chilly mornings because they are perfect for oats! This morning I had a big bowl of steel cut oats with a banana and tbs of peanut butter! It was delicious and completely warmed me up!
Steel cut oatmeal is a truly healthy, simple, and delicious breakfast option! Making your oats the night before is so simple and allows you to have a quick and great breakfast in the morning.
For the night before…
1/4 cup of steel cut oats
3/4 cup of water
pinch of sea salt
In the morning…
2 ounces of almond milk, regular milk, or low fat milk
1 tbs of almond butter, nutella, or peanut butter (today I used peanut butter)
1 small banana
Before you go to bed, bring the water, steel cut oats, and pinch of salt to a boil on the stove. Then, reduce it to a simmer and let it cook until all of the water is absorbed into the oats. It usually takes mine about 12 minutes. Remove the oats and put it in a tupperware container overnight.
In the morning, remove the tupperware from the fridge and add your two ounces of milk to the cold oats. Cut your banana into smaller pieces and add them to the container. Heat for 45 seconds in the microwave. Remove the container and stir. Heat it for 45 more seconds (or until it is creamy) and add a tbs of your favorite peanut butter!
Steel cut oats contain essential grains that are full of nutritional value and are high in B-vitamins, calcium, protein and fiber. They are also low in salt and unsaturated fat. One cup of steel cut oats contains 8 g of insoluble fiber! According to the USDA, whole grains reduce cholesterol and high blood pressure and can even help prevent heart disease, cancer and diabetes. Whole grains also help flush fat and cholesterol out of your system and provide powerful antioxidants that help you stay healthier, look younger, and live longer!
