It is our second to last weekend here at school which means it is MAY WEEKEND! (aka. spring weekend) Unfortunately, I was only able to participate in festivities yesterday because I need today and tomorrow to prep/study for my last lab exam on monday (my luck!) I’m a little bummed out since I’m not able to be out with my friends today, but I’m happy I was able to yesterday
Yesterday morning started bright and early at 9:30am (6:30am for me to stretch, foam roll, ice, and eat a good breakfast – have to take care of my feet since I was going to be on them literally allll day).
1 egg and 3 eggwhite omelet with asparagus, sundried tomatoes, and goat cheese – a toasted cinnamon raisin ezekiel english muffin with some PB and banana – GREAT way to fuel for the day ahead
A local bar down the street was having their annual Bagels and Booze party to kick off the weekend. The first 800 people got these wonderful cups with their drinks and we all were able to hang out together, dance, and wonder around the bar and outside to see our other friends we haven’t seen in a while. We got there around 10:00 am and stayed until 2:30pm when we headed home for some lunch. Instead of going out later on, a bunch of people came over and we all just hung out – it was a fun day and I’m so glad I was able to enjoy it with some awesome people
I was up early this morning to straighten up my room, stretch, and make myself a decent breakfast before I headed to the gym for a workout.
I made myself a big bowl of oatmeal that tasted A-MAZ-ING!
1/3 cup oat bran, 2/3 cup boiling water, 1/2 scoop chocolate protein powder, 1/2 banana mashed, ~1/2 cup low fat lactaid cottage cheese, a sprinkle of hemp seeds, 1/2 tbsp PB, and a 1/3 cup fresh blueberries
(My mouth is watering just thinking about it!!! I honestly LOVE cottage cheese in my oats – greek plain yogurt too!)
A couple hours later I at the other 1/2 of the banana and headed to the gym.
Today I had planned to tackle 3 miles on the track. I can happily say I was able to do it! My feet were slightly sore during it, but nothing bad. I could’ve went more than 3, but knew that it was smart to stop there and give my feet a break. It was a very easy run, but still a run! I just felt so relieved to have finally been able to finish a run since my first half marathon last sunday. My feet are getting better; they’re just taking their sweet old time getting there…
After my run, I spent a good 20 minutes stretching out my legs and feet before I got in a strength workout. I spent a little more time at the gym than I planned to, but the extra minutes of stretching felt great and was much needed to help my feet.
I got back home, showered, made myself a quick lunch of left over Vegetable Curry soup (topped with greek yogurt and some grated locatelli) and a salad with tuna fish, whole wheat ciabatta bread, dried cherries, and sun dried tomato chips (just take sun dried tomatoes in a bowl, drizzle some olive oil on top, cover with a paper towel and put in the microwave for 10second intervals until they reconstitute and are plump – let cool a bit and either leave whole or crush over the salad)
After lunch, I got to work on my study guide and made flash cards. I am SO sick of studying and school work, but I know that I am almost done, so I am trying to stay focused and finish strong! I have a goal to graduate with honors, and I don’t want these last few weeks to ruin it.
With that said, I must get back to completing it so I can hang out with my friends when they get home
Along with studying, I have a little bit of prep cooking to do tomorrow for my busy week ahead. I’ll clue you in on my prep once it is all done! Prepping ahead seriously helps keep my stress level low – it’s one less thing to worry about!
