Spring Cleaning, Black Bean Burgers & Spicy Potato Bites

Cleaning is exhausting. On Sunday, I only finished about 1/3 of the cleaning I wanted to. I ventured into Manhattan with friends Lindsy and Sarah to go to the NYC Vegetarian Festival . We never actually got inside though, the lines rotated around the block with wait times up to 3 hours. I was so glad to see such an amazing turnout, but next year I will be much more prepared (or maybe they will be).
Back in Brooklyn, I started with the kitchen and quickly realized my cupboards needed a little spring-renovation as well. I love trying new and exciting recipes, but sometimes I forget what I have sitting right in front me – bags of quinoa, whole wheat pastry flour, sunflower seed butter, vegan chocolate chips! Looks like time for a chocolate chip quinoa cake with sunflower seed butter.
For right now, I’m focused on tasty and fun work lunches, in part as an honor to my friend Kerry. She recently asked me for a few suggestions and I thought it might be time to share a few here.
The better burger & fries…
Spicy Black Bean Burgers
1 can black beans (rinsed and drained)
1 red bell pepper, chopped
1/2 cup dry rolled oats (sectioned out in 2 1/4 cups)
1/4 cup sunflower seeds
about 1 tbsp olive oil
1/2 tsp cinnamon
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1 tsp sea salt
Directions: Preheat oven to 325F. Add bell pepper, 1/4 oats and sunflower seeds to your food processor/blender and grind (make sure they are still a little choppy & chunky). Add 3/4 of the beans, all spices, and the olive oil. Process until lightly mixed. Spoon mixture into a mixing bowl and then mix in the rest of the beans and oats (1/4 cup). Form into 6 patties. Place patties on a lined baking pan, and bake at 325F for 40 minutes, turning once carefully after 20 minutes (be careful, they are crumbly).
Spicy Potato Bites
1/2 potato, chopped into squares
chili powder, salt + black pepper to taste
1 tsp olive olive
Preheat oven to 425F. Toss potatoes in olive oil and spices until well coated. Cook for about 35 minutes, or until crispy.
I prepared one of my burgers between two sandwich thins + greens + 1 tablespoon veganaise. Delicious!
