Spreading Christmas Cheer

Posted Dec 23 2013 4:19pm
Hi friends!  Sorry I've been so MIA, but our lives have been all "Ho, Ho, Ho" and I've been trying to soak in every second of the holiday fun.
I'm just popping in to type this quick post as I have about 10 minutes before I have to get back to working on our family Christmas dinner for 15 at our house tonight.  It's the largest dinner I've ever thrown and it's still stressful even though I have other people bringing stuff too.

Here's a look at our menu- Meatball and Sunday sauce from Taina
- Skinny baked chicken florentine
- Roasted chicken and balsamic tomatoes
- Roasted broccolini
- Asparagus wrapped in phyllo
- Bruschetta from Kyle
- Tomato and mozzarella salad
- Anti-pasto salad from Kayla
- Garlic bread
- Buffalo chicken dip from Nancy (a family favorite)
- Veggie platter
- Cookies
- Cake balls from Kelsey

It's the calm before the storm now as the chicken and the broccolini are last minute cookers...and then keeping everything warm!  Oh how do you hosts do it?

Kyle and I had super fun parties to attend this past Friday and Saturday.

I've also tried to get in some long runs, but parties + 87 degree Florida days weren't too fond of me.  I did 9 on the treadmill Tuesday, 5 on Saturday, and 6 Monday am. I'm hoping for a long, yet boring run around my Mom's neighborhood in Virginia. Plus the annual Christmas Eve workout!
I hope you all are enjoying your holiday!

What are you doing for Christmas Eve?  Christmas? Boxing Day?

Love and Navidad,
Carissa & Kyle
