spinach & broccoli calzones

After a long and  head-achey day the last thing I wanted to do was sit through 3 hours of business fluctuations at Loyola.  However we have our final exam next week and I need all of the help I can get.

I had to run a bunch of errands for my trip tomorrow prior to class but before doing so I  prepared something to eat for when I got home:

This meal came entirely from Trader Joe’s, but different shopping trips.  

I spied this bag of pizza dough sitting in the freezer the other day and was just waiting for an excuse to make something carby and delicious.

We make pizzas with the dough pretty often, but I decided to class it up a notch and make calzones tonight. 

This morning I had called BMB and led him through a hunt for the pizza dough in the freezer.  We almost ended up with turkey burger dough but luckily that crisis was averted.   The dough defrosted in the fridge all day and was ready for action by the time I got home.

For the calzone filling I combined:

¾ cup low fat ricotta
1 cup broccoli (steamed in the microwave for 1 minute)
1/2  package spinach, defrosted
1 tbsp garlic gold
1/2 tsp basil
1 tsp dried onion
1 tsp oregano
1/2 tsp red pepper flakes

 all mixed together

To prep the dough I first divided it into 2 balls on a floury counter.

I then rolled the balls out flat and spooned on the filling.

Then I added the best part.

…and also some chicken I had boiled to the manly version.

I folded the dough over and pressed the seams shut with a fork to seal the deal.

After spraying the calzones lightly with cooking spray they went into the fridge until BMB later preheated the oven to 425 degrees and baked them for 25 minutes.

I arrived home to a warm, delicious dinner.  SO easy.

Now off to pack and hopefully get some shut eye.  Early flight in the morning… 3:30 AM comes quick!
