Spicy Veggie Casserole

Veggie casserole is my go-to meal when I find myself in front of the fridge scratching my head a bit and wondering what I feel like whipping up. It's also my favorite post-hot-yoga-class meal because it's EASY, QUICK and it bakes up nice and tender in the oven while I'm in the shower. The best part about it is that it's also a great fix to use up those last bits of veggies the night before you head to the grocery store or Farmer's Market to replenish. My only MUST HAVE for veggie casserole is broccoli. Oh yes--and cheese!

1.  Coarsly chop any fresh veggies you have on hand. My mix includes
3 Florets of Broccoli
1 Red Bell Pepper
3 medium carrots (or 2/3 cup of coarsely chopped organic baby carrots)
2 Lg. Portobella Mushroom Caps
1/2 Sweet Onion

**I also love eggplant, zucchini, yellow squash and asparagus if I have it on hand--but really, anything works!

2.  Add 2 Tbs. of High Heat Organic Sunflower Oil to fry pan or iron skillet and heat on medium/high heat.
** I like to scorch my veggies on a nice high heat before I put them in the oven and sunflower oil works best for this. Olive oil is very delicate and should not be used at high heat, so try to avoid it in this case. You can find Organic Sunflower Oil at any health food store and most grocery stores. The oil, which is extracted from sunflower seeds, has a lovely flavor and is FULL of Vitamin E and fairly low in saturated fat. I love the stuff :)

3.  Add veggies, fresh ground pepper, sea salt and 2 tsp. - 1/2 Tbs. Red Pepper Flakes (depending on your preference for the spice factor!)
4.  Sear veggies for about 5-10 minutes, stirring regularly.

5.  Add 1/4 c. of organic veggie broth (or water if you are in a pinch), and 3 Tbs. Balsamic Vinegar.
6.  Place pan in 350 degree oven for 15 minutes.

7. Add 1/4 c. of freshly grated mozzarella cheese (for Vegetarian) or sub a soy cheese to make this recipe Vegan.

8.  Return to over for 3-4 minutes, remove and ENJOY! I usually pair veggie casserole with brown rice or whole wheat couscous.
