Well the beautiful weather didn’t last long and its back to 45 degrees and rainy here in Lexington. Of course when cold weather sets in its back to craving comfort foods and the arugula I bought yesterday got pushed aside and replaced by a much more satisfying meal.
Warm Soba Noodles with Toasted Sesame Seeds
The hearty buckwheat noodles pair perfectly with the bright, crisp veggies and sesame sauce for a substantial cold weather lunch!

Ingredients:
1/4 c sesame seeds
2 T balsamic vinegar
3 T Braggs liquid aminos
1 garlic clove
1 tsp sesame oil
1 tsp raw cane sugar
2 bundles buckwheat noodles
1/4 c peas
1/4 c edamame
1/4 c carrots
1/2 c broccoli
cilantro for garnish
Directions: Bring water to a boil and add your soba noodles, cook according to package directions or about 4 minutes. In the meantime toast your sesame seeds in a pan over medium heat. Steam the vegetables while noodles are cooking about 5 minutes and prepare sauce by whisking ingredients together in a bowl. While everything is still warm toss together, sprinkle with cilantro, sesame seeds and serve immediately. This dish would also be great served cold the next day if you have any leftovers.
Oh yes, a warm and comforting lunch like this one makes the cold weather tolerable for at least a few more days.

So today was day two of my core workout challenge and my abs are definitely feeling it. Here are my stats for the last two days. I am hoping to take a break tomorrow and then increase my reps this weekend.
Plank- 30 seconds 3 sets
Bicycle- 12 on each side 3 sets
Single Leg Stretch- 12 on each leg 3 sets
Reverse Crunch- 12 reps 3 sets
Side Plank with Rotation- 6 per side 3 sets
Side Plank- 3o seconds each side 2 sets
The Hundred- 90 pumps
Twist- 12 times per side 3 sets

I also wanted to thank you all for the insightful responses to yesterday’s post. It really means a lot to hear what you have to say! I have been working on a research paper the past few days regarding a vegan diet and its impact on reversing type two diabetes and I cannot wait to share some of the things I am learning with you all.
