So I need to go grocery shopping…

I haven’t been grocery shopping in over a week so tonight’s dinner is somewhat similar to breakfast…somewhat.

Disclaimer: One of the purposes of me starting this blog was so that I would be more adventurous in my eating and cooking. See, I tend to eat the same things every day…boring, I know. Be patient with me as I try to switch up my meal ideas!

Tonight’s new recipe: Healthy Chipolte

Wait, is that possible? YESSSS!

1/2 cup brown organic rice

3/4 cup Trader Joe’s fire roasted peppers and onions

1/4 cup black beans

1 Chile Lime Chicken Burger (Trader Joe’s)

1 Tortilla Factory Low Carb Wrap

These guys are delicious…just like the tortilla I had at breakfast…a little bit bigger though because it’s a wrap. Def recommend this gem.

I mixed the peppers, rice and beans together while I waited for my chicken burger to cook. I just threw it in a pan and cooked it that way. Very elementary.

I cut up the chicken burger into strips…

And placed them on the bed or rice, beans, and peppers!

Delicious! :)

The total calorie count is 415 calories…high I  know but you get SO much food. Plus, compared to Chipolte…that’s pocket change. You could easily cut out the tortilla and just do everything in a bowl. I would also suggest adding salsa or something…most people will probably find this a little dry. You could also add cheese, sour cream or guac…however, I hate all those things so that’s why I didn’t do it. ;)

The Marathon…EEK THE CAT

So the marathon is a week from this coming Sunday. O.M.G. And I’ve been having problems with my shins…I tried to go out running last night and made it a block before I had to hobble home. This morning I popped 4 Advil before my 5:45 am run and was “o.k.” I know I need to ice but it’s really annoying to run an ice cube up and down my shin.

To remedy this problem I ventured to the CVS across the street from me and got this:

Hopefully my shins will start feeling better before the race!!

In addition, I picked up this baby…to satisfy my after dinner sweet tooth. I know most of you have one! Even though I was still pretty full from dinner…I couldn’t resist!

Crappy picture…but I wanted to show you the nutritional value…not the best butttttt…it’s better than DQ! Well, not better in the taste department but better for you.
