Skinny Side Dishes: Roasted Spiced Cauliflower

This holiday season, I plan to pile my plate high with filling, great tasting side dishes, so I can indulge in a few of my absolute favorites.   My strategy:  Pick a Main Carb indulgence among all of the rich starchy sides to have with my healthy turkey and save most of the others for leftovers.

For instance, I plan to skip the baked sweet potatoes and creamy mashed potatoes served with our holiday meal and have a generous portion of my favorite to-die-for homemade stuffing and gravy.  Filling my plate with this roasted cauliflower will be a perfect BIG side dish, along with my roasted Brussels sprouts recipe.  As an added bonus, the turmeric spice provides a terrific anti-inflammatory to counter the shock of a large Thanksgiving meal in my system.

For the next day’s lighter dinner, my turkey leftovers meal will include a reheated sweet potato.  For a lunch, I may even use those mashed potatoes with shredded turkey to create a little extra Thanksgiving pep to a low carb wrap or frittata.

After a few days, I am happily turkey’ed out!   Yet I never miss out on holiday favorites by spreading it out over two or three days and rarely overdo it for one particular meal.

Pick your Main Carb and stick to it!  Afterwards, pick your Main Indulgent Dessert for Thanksgiving and enjoy it.  Again, save a slice of your second favorite dessert for next day.

Roasted Spiced Cauliflower Recipe


  • 2 Heads of Cauliflower, sliced in large florets
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Minced Garlic
  • 1 tablespoon Turmeric
  • 1 tablespoon Fresh Ground Black Pepper
