Skinny Hurricane Cocktail and Skinny Hurricane Eating

Here on the waters of the East Coast, we are preparing for days of potential power loss when Hurricane Irene hits with a fury!  However, not even a natural disaster will compel me to reach for bags of chips and processed junk to eat by candlelight.  It is just as easy to stock up on plenty of healthy ingredients to create meals that don’t require cooking.

First, I bought a variety of different types of green and red lettuce to top with no-cook protein sources including canned Black Beans, Chickpeas, Tuna, Salmon, plus Cheese and Nuts.  Olive oil and lemon mixed with minced garlic will be used for a pure, sugar-free and salt-free salad dressing.

Second, I stocked up my freezer with water bottles to use as ice packs to keep some of the food chilled in coolers.

And tonight, I am cooking plenty of whole grain penne pasta and my favorite wild and brown rice to create chilled dinners.  I’m also steaming extra fresh vegetables with our dinner tonight to use this weekend. Then, we will have large beautiful salads for lunches and chilled pasta or rice mixed with protein and chopped vegetables for dinners.

Breakfast will be a challenge, since I do love my cooked vegetable omelets.  Fortunately, I bought plenty of plain Greek yogurt to use with fresh chopped fruit, nuts and cinnamon for a high protein breakfast blast.

What am I drinking?  I have my usual red wine, but thought it would be fun to create a Skinny Hurricane Cocktail to try to lighten up the environment around here.  No, I typically don’t drink my calories, but it’s a hurricane people!!

So I snagged some rum at the local mobbed liquor store.   The difference in a Skinny Hurricane from a New Orleans Hurricane drink is the lack of syrup, triple sec or sugar!  The sweetness comes from the orange juice and pineapple juice, so give it a try.  Make certain to get the purest juice as possible with no syrup or sweeteners.   Keep it natural.

Skinny Hurricane Cocktail Recipe:

  • 1 oz White Rum
  • 1 oz Jamaican Dark Rum
  • 1 oz Bacardi 151 Rum
  • 3 oz unsweetened Orange Juice
  • 3 oz unsweetened Pineapple Juice

Pour it over crushed ice, pop on lime and lemon wedges and enjoy!
