Skinny Beast Goes To The Culinary Institute of America!

It's true! I attended a class at the world renowned Culinary Institute of
America in Hyde Park, NY. The class was called "Hors d'Oeuvres at
Home", and it was THE BOMB! The CIA is a serious school with serious food and serious chefs, so I was scared. Plus, they have a strict NO BEAST policy, so I had to go incognito posing as a petite pony-tailed pregnant blond chick who has absolutely no issues with butter or frying...I am a good actress. The class was a blast. We whipped up
a bunch of fabulous fancy appys, had a big feast at the end, and left with
an adorable CIA apron and a beautiful coffee table book as keepsakes.

Now, my focus for the next few posts will be...duh...Hors d'Oeuvres. But in true Skinny Beast form, I will use the CIA experience as an inspiration, creating delicious and pretty starters that wont make you guilty and fat. I'm thinking Hummus, Chicken Satay Skewers, Tea Sandwiches, Bleu Cheese Mousse, Papaya and Black Bean Salsa, Spinach and Artichoke Dip, and/or Steamed Wontons with Shrimp....YES?...GOOD? I have some victims (guests) coming this weekend to practice on (serve).
