I thought this day would never come. SISTER MOVED HOME! Well, for about 3 weeks, then she is off to DC for a fellowship with the FCC this summer. After that amazing experience, she is back in Minneapolis for her third and final year of law school. I am so happy for her and for me. It is going to be so nice having my best friend back in the same town as me.
We hung out for the first time last night after work without the boys. We accomplished a lot of our favorite things…we laid out in the sun, worked out, ran, walked to whole foods, and got fro-yo. I’d say it was a pretty successful night.
We even had time to do some baking. We used the Minimalist Baker’s Gluten-Free Vegan Breakfast Cookie recipe, but made some changes. Our version ended up being NOT vegan, but still delicious!
Instead of peanut butter we used my homemade Vanilla Cashew Butter and instead of flax eggs we used real eggs. I also added dried cranberries So yes, click HERE for the original recipe from Minimalist Baker. I ended up making mini cookies- about 42 of them actually! It comes out to about 73 calories/cookie. Not Bad!
My favorite way to eat cookies is with an ice cold glass of milk.
My second favorite way is with a hot cup of coffee for an afternoon pick-me-up.
The reason why we chose these cookies is because they are actually good for you. They are free of refined grains, refined sugars, butter, and they are gluten free! What more could I ask for?
