Just when I thought I was going to have to break down and actually go to the grocery store before I could eat my next meal, I spotted a sweet potato hiding in the bottom of the fruit basket. (Never mind it had roots sprouting out of it in ostentatious lengths- a little growth never scares me;) )
I sliced them as thin as I could without risking fingertip amputation so ensure they’d cook as quickly as possible, then doused them in a good coating of olive oil and chili, onion, & garlic powders.
425 degrees and 20-some minutes later, I had delicious tater rounds.
I completely ignored these guys while they were in the oven- no ‘low & slow’ roasting, no obsessive checking, not even a single flip.
They’re probably the best sweet potato rounds I’ve made- soft, chewy centers, with crispy edges. What gives?!
Although I could probably survive on sweet potatoes alone, I mixed up some black beans, corn, & edamame to go along with my rounds.
With some salsa, chili powder, and lime juice, I had a full meal in minutes. Lime juice is key to making this not taste like it’s been thrown together from cans & freezer bags (which it was).
Again & again, the simple meals are almost always the most satisfying.( Probably because I’m starving & desperate by the time I figure out what to make!)
