Simple Fresh Summer Lasagna Recipe

We present you with our Summer Basil Lime Un-baked Lasagna

Pure2Raw Recipe: Summer Basil Lime Un-baked lasagna

Ingredients for Layers:

  • Lasagna layers – thinly sliced zucchini and cucumber
  • ‘Ricotta’ Layer – Lime Almond Ricotta
  • Hummus layer – Zucchini squash hummus
  • Handful of fresh basil and mint

Pure2Raw Recipe: Raw Lime Almond Ricotta

  • 1/2 cup almonds, soaked and rinsed
  • 2 juice of limes
  • pinch of salt
  • handful of fresh basil
  • 1 small banana pepper

Place all ingredients into a small food processor and pulse till combined. We did not pulse ours completely.

Next zucchini hummus

*We used our squash hummus , you may use any flavor of hummus or any hummus recipe you like .

Gather your ingredients and have everything ready to start layering!

Time to start building our lasagna.

First layer we used zucchini topped with lime almond ricotta spread

Next layer was some cucumber slices

Top hummus layer with some fresh mint leaves

Continue the process for another layer of zucchini and lime almond ricotta, than cucumbers, and hummus… top with purple basil

Finish off with more zucchini layers

A healthy, light, in season, full of flavor and vitamins, easy to digest, low calorie summer lasagna. And best of all it does not take hours to make nor do you not have to stand in a hot kitchen!

Now you might be thinking this will take a long time to make! Well it does not. If you already have the two sauces made up the day before putting this dish together is fast. We used our mandoline to cut the cucumbers and zucchini into thin layers, or you may hand slice them too.

Treat yourself to a simple, easy, healthy lasagna for dinner one night!
