Simple Cooking – Sweet Potato Mash

So this is something simple but delicious I have been making regularly. A sweet potato mash, the reason I love this dish is the versatility and variations that are so simple.

The Basic Recipe – For the core of the sweet potato mash you will need the following ingredients to serve 4-5 people (although I always suggest making extras)

  • 4-5 Sweet Potatoes (bigger the better)
  • Chunk of Butter
  • 100ml Coconut Milk
  • Nutmeg and Cinnamon
  • Sea Salt and Pepper

That is the base recipe and I will show you guys 2 simple variations for a sweet or savory take on the dish. But first things first the mash is real simple to make and is much like making any mash, but If you have never made mash before have a look over these steps…..

1- Cut the Sweet Potatoes up into small chunks and throw them into a large pan.

2- Fill the pan with water and sea salt and bring to the boil.

3- After about 10-12 minutes they should be done (test by poking with a knife and see if it slides through easily)

4- Drain the water and get mashing either with a masher or fork.

5- Add the coconut milk, butter and spices and continue to mix in until the whole consistency is smooth.

Simple, once that is done you have a delicious sweet potato mash which is amazing with chicken or steak.

Spinach Sweet Potato Mash - OK this is the first take on the recipe and one I like to make when serving with steak.

1- Grab a clean pan and a large handful of spinach, cook with butter or coconut oil until wilted (also throw in some sea salt)

2- Now carefully fold the spinach into the mash.

That is it, adding a bit of extra nutmeg is nice with this take on the mash and try to go for freshly grated if you have the chance. Also try throwing in some chillies for a spicy kick. Have a look at this pic http://twitpic.com/1dkjbi for a version made by castlegrok with acorn squash.

Breakfast Sweet Potato - This is why I recommend making some extra of the basic recipe which you can store int he fridge for 4-5 days and reheat whenever you like.

1- Take a portion of the basic recipe and start to heat in a hob

2- Add some of the following:

  • Berries (the tangier the better)
  • Cinnamon (extra)
  • Dash of Milk
  • Sunflower or Peanut butter

3- Keep mixing until the mash has a smooth texture.

You will find the berries and the nut butter work beautifully to compliment the sweetness of the mash and make for a great side to some eggs or even just a glass of milk. A worthy alternative to your regular oatmeal……

Note: If you are after a lower carb version or something different mix butternut squash with the sweet potato. For instance instead of 5 sweet potatoes use 2 and half a small butter nut squash…..
