Shrimp & Broccoli Fettuccine #Recipe #dairyfree

Posted Dec 02 2012 12:26pm
This morning I was lucky enough to spend four hours shopping with my son. The Elf for Health weekend challenge is to go through your closet and donate a bag of clothes to Goodwill. I think I got confused. I spent two hours in Goodwill and bought a blouse and a belt. This means I was short on what I needed wanted so I'll have to go to the Goodwill by work this week.

Shrimp & Broccoli  Fettuccine

A blend of shrimp, broccoli, fresh garlic and lemon juice in a non-dairy creamy sauce.

Prep Time:  25 minutes
Cook Time:  15 minutes
Servings:  6

1 16 oz package whole wheat fettuccine
1 1/2 pounds uncooked medium shrimp, peeled and deveined
1/2 cup butter
1/4 cup minced fresh parsley
2 garlic cloves, minced
1 tablespoon lemon juice
1 cup chicken broth
2 tablespoons whole wheat flour
1/2 teaspoon salt
1/8 teaspoon pepper
1 package steamed broccoli

  • Cook fettuccine according to directions
  • Cook broccoli per directions (I used a steamer bag)
  • In a large skillet, melt 4 tablespoons of butter over medium heat
  • Cook shrimp for 4 minutes or until pink
  • Add parsley, garlic, lemon juice, broth, salt and pepper
  • Add remaining butter
  • In a small bowl whisk flour into the remaining chicken broth until it forms a rue
  • Slowly stir in rue once butter is melted
  • Cook until bubbly and thick
  • Add in broccoli
  • Mix thoroughly
  • Serve over fettuccine

You must head over to  Dinosaur Superhero Mommy  and see why we think this is so funny. involves that Elf on the Shelf.

My favorite pin today involves fashion. It must have been all that thrift store shopping I did today.

Small Talk:

Do you shop at the Goodwill? Have you donated anything lately? Where would you wear this dress?
