shrimp and goat cheese quesadillas

This was one of the quickest and tastiest meals I've made in a while.  Combine with avocado and fresh black bean and corn salsa to make your taste buds start partying. 

Shrimp and Goat Cheese Quesadillas
adapted from Eat, Live, Run
10 corn tortillas1 lb raw shrimp, deveined and tails removed1 bag frozen pepper/onion mix1/2 cup mozzarella cheese1/2-1 cup crumbled goat cheesechili powdersaltcayenne pepper
Heat up frozen bell peppers and onions in a skillet over medium-high heat for a few minutes.  Transfer to a small bowl and in the same skillet spray with cooking spray and increase to high heat.  Add the shrimp, toss with chili powder, salt, and cayenne pepper to taste, and cook for a few minutes until pink.  Scatter goat cheese on tortilla, top with peppers/onions and shrimp and sprinkle with mozzarella.  Lay another tortilla on top and cook in a greased skillet over medium heat until cheese has melted and and tortillas are crispy.  Let cool and cut in half.  Repeat with remaining tortillas.
