Heat oil in a large nonstick skillet over medium heat. Add tempeh and cook, stirring frequently, until beginning to brown, 7 to 9 minutes. Combine honey, soy sauce, water and cornstarch in a small bowl. Add to the pan and cook, stirring, until the sauce has thickened and coats the tempeh, about 1 minute.
* You could probably substitute chicken or tofu for the tempeh as well.
The tempeh was topped on a bed of romaine lettuce with mushrooms, fresh corn (scraped off the cob), nutritional yeast, green peppers, tomato, cucumber, broccoli, avocado, and beets.
If you’ve never tried tempeh before, you really should give it a chance. It tastes great, is high in protein, and it is pretty darn inexpensive. All great reasons to try it!
