Hi guys I hope you all are having a fabulous Wednesday. After a day filled with classes and work I don’t have much time or energy for a lengthy post but I figured I would share a little glimpse of what I have been eating lately, enjoy!
Breakfast consisted of some overnight oats topped with sunflower seed butter, homemade jam, granola , and coconut.
For lunch I munched on leftover sloppy jo’s baked in a green pepper topped with nutritional yeast and sesame seeds which turned out better than I had expected!
I added a side of cucumber wakame salad
and a strawberry pistachio donut for dessert
Dinner was a bowl of miso soup x2
and a coconut and jam filled muffin which hit the spot.
