Seasonal Favorite Foods and The Chicago Diner

As always, I truly enjoyed reading all of your wonderfully open and honest responses to yesterday’s post about my difficulties with friendship. Although I certainly don’t wish these difficulties on anyone else, it is nice to know that I’m not the only who struggles with this and I really appreciate all of the suggestions for improvement.

Last night was date night with Nick so I took the night off from my usual blog reading. Although, I enjoyed spending time with Nick, I really missed checking in on all of my blog buddies. Perhaps that signals a bit of progress!

For date night we headed to the fabulous Chicago Diner . I usually try to order new dishes whenever we eat out, however, I had been craving this awesome Vegan BBQ Bacon Seitan Cheeseburger with coleslaw all week long.

It did not disappoint.

As well as this awesome bitter beer made by the local Two Brother Brewery.

I enjoyed a few sips and was surprised by how much I enjoyed the bitter bite.

I couldn’t leave the Diner without taking a piece of their amazing vegan peanut butter chocolate cake home to enjoy while watching “Boys Don’t Cry”.

Mmmmm….. It’s probably good that the Chicago Diner isn’t right around the corner from our apartment because if it was, I think I would be eating this entirely too often!

Today we overspent our grocery budget goal of $125 for the second time despite sticking to our list. In total, we spent $140 which is certainly better than last week’s $160. I’ve come to the conclusion that whether or not we actually achieve our goal of $125, the process of inventorying our staples, sticking to our list, and keeping tabs on our spending is still helping us save a good amount of money. As always, progress not perfection !

While shopping, I had fun picking out items for Caitlin’s wonderful ‘Baking for Boobies’ bake sale to raise money for the Susan G. Komen Foundation.

I don’t have a favorite cookie or bread recipe that will stay fresh during shipping, so I am offering a package of foodie favs.

While I have foodie favs on the brain, I thought it would be fun to share some awesome ingredients that I have been digging lately, particularly now that the no longer ridiculously cold warm weather is finally here

Crunchy Greens

The return of spring weather is causing me to crave crisp, crunchy greens and I honestly can’t get enough of them. We toss shredded cabbage on top of pad thai , tacos, and green salads. I chop up romaine lettuce and add it to just about everything.

When I was little, my would cook a big pot of Cream of Wheat for breakfast on cold mornings. I always topped mine with a spoonful of dark brown sugar that would melt into a dark puddle of sweet syrup. I believe that food memory is the reason that whenever I’m feeling blue, I crave a steamy bowl of hot oat bran topped with peanut butter and maple syrup. Oat bran is a little heartier than cream of wheat but it still has the same comforting flavor, temperature, and texture.

I admit, plain tofu can be bit bland. Fortunately, it acts like a sponge and soaks up any flavor you mix it with. With the return of warm weather, I find myself turning to tofu more frequently for a convenient and versatile source of protein. At $1.49 for 4 to 6 servings, the price can’t be beat.
