Arugula
Baby Spinach
Thinly sliced onions
Sliced cucumber
Thinly sliced or chopped apple
Toasted pecans (either slivered or chopped)
Pan-seared Shrimp (Buy 1/3 – 1/2 pound of shrimp per person)
For the shrimp: toss cleaned, deveined shrimp in 1 clove pressed garlic, a little olive oil, some fresh lemon juice, salt and pepper.
For the Pomegranate Vinegarette you’ll need:
This recipe will make enough dressing for multiple salads and can be saved in a container in the refrigerator.
To finish off the meal I bought a multi-grain baguette which I made into toasted garlic croutons. Slice up the bread, drizzle olive oil, garlic powder, salt, and fresh pepper on top and let bake in the oven on 350 degrees for 15 minutes.
Put all your ingredients together on a plate and enjoy!
