Do you ever wake up and want to stay in bed and be straight up lazy? Everyday? Cool.
But seriously. I mean pull the covers up close to your chin, host a
Boy Meets World marathon for a party of one, and eat a nutritious breakfast of soy
chocolate peanut butter ice cream ? I wish I could tell you that’s what I did today. Especially the
Boy Meets World part. I loved Sean Hunter. I actually fantasized about becoming his loughly wedded wifey. That bowl cut just made me swoon.
Oh yeah.
Lunch
Instead of said fantasy, I had the exact breakfast you saw yesterday and completed a couple of homework assignments. Before I knew it, my stomach was telling me it was lunch time. At 11:15 a.m. Oh well. What the stomach asks for it shall receive, right? Salad, ole!
This was my first time having Gardein Chick’n strips and I must admit, I was not a fan. I’m not usually into mock-meats. In my opinion, they sort of diminish the idea of veganism and their appearance really freaks me out. My dad was a gem and thoughtfully purchased them for me this past weekend, so I decided to give ‘em a go. But they were a no-go.
After the less-than-successful lunch, I powered through some more homework before taking a spin class on campus. Our instructor, Marianne, is such a spit fire! Her energy is contagious. Instructors really make or break a fitness class, and she adds so much to ours.

Flackers . Has anyone ever tried these cracker-like creations? They’re so delightful!

There are a few different flavors but I opted for the savory. They are made with (all organic) flax seeds, apple cider vinegar, soybeans, garlic, onion, chili pepper, and basil. They are AMAZING. Just 3 flackers pack in 5 grams of protein and 7 grams of fiber! They are fairly expensive at $3.49 a box but that isn’t much more than many of the common processed stuff.
