Salty Honey Pie (for all your holiday pie needs)

The past five days are a complete blur. Maybe it was all that pie. Or maybe it was the wine, leading to late nights and consequently, even later mornings. Or was it all that casual conversation one has to make with relatives over plates of green beans and Jell-O salad?

I’m here to say – it was most definitely the pie. How can I be so sure?

I mean, just look at it.

One bite and those endorphins start swirling and you forget about unloading the dishwasher or throwing in another load of laundry. You think about all the good things in life – your pajama pants. Freshly washed sheets. The smell of cut grass.

And pie.

Gooey, sweet, caramelized, honest-to-goodness pie.

There’s something different about this pie, though. Those little flecks on top? Not sugar.

Salt.

Beautiful crystals of Maldon sea salt flakes that bounce off the honey encased in this pie, and melt on your tongue with every. single. bite.

This pie, posted by Sauce Magazine and baked by Amrita of The Sweet Art , uses 3/4 cup of honey (Buy local! Your allergies will thank you). Add a few more basic pie ingredients and this pie comes together with ease, letting your oven do most of the work. The sea salt on top provides the finishing kiss of savory on an island of sweet.
