Since it was Friday night and I had no wild and crazy plans other than to polish off two buckets of popcorn while watching a movie at home, I figured that I’d be a little adventurous and make something new.
This actually turned out to be a great decision because Michael and I absolutely loved this meal.
It has officially earned a place on our very official list of favorite salmon recipes!
This sauce makes the meal. It is creamy, garlicky, and lemony without being overpowering. I’m sure that it would taste great over other types of fish and even chicken or beef. Enjoy!
Prep time: 10 minutes
Cook time: 15 minutes
1 pound salmon filets
1/4 cup Earth Balance butter, melted
4 tablespoons fresh lemon juice
1 tablespoon dried dill
2 cloves garlic, minced
Sea salt and black pepper, to taste
Preheat oven to 350 degrees F. Lightly grease a medium baking dish.
Place salmon in the baking dish. Mix the butter, lemon juice, garlic and dill in a small bowl, and drizzle over the salmon. Season with salt and pepper.
Bake 15 minutes in the preheated oven, or until salmon is easily flaked with a fork.
I’m really glad that I ventured out of my salmon safety zone and made something different. I have so many favorites that I tend to stick with them, and it had been awhile since I made a new salmon recipe.

I love mahi mahi when I can find it. And Chilean sea bass with any sort of Asian sauce is probably my all time favorite but that’s an expensive treat (and also hard to find outside of fish markets and restaurants). This recipe looks great though; it might make me venture outside of my no-salmon comfort zone
