Salmon Burgers with Cucumber Dill Sauce..Simple Summer Supper

THE SALMON BURGER... (and the sauce)
I just finished gobbling this surprising little gem. It's super flavor-filled, and doesn't have that creepy fishy taste AT ALL. The burger itself has approximately 200 calories, packed with all of the benefits of salmon (high protein and Omega 3 packing a powerful punch in protecting your precious cardiovascular health, muscle & tissue development, eye care, and body metabolism! Add a weight watcher's brand whole wheat bun will only tack on 130 calories, AND provide an extra dose of fiber and whole grains.

  • 1 50z packet boneless pink salmon (Bumble Bee)
  • 1/4 cup minced green onion
  • 1/4 cup minced celery
  • 1/4 cup bread crumbs (I use no salt added)
  • 1 egg white
  • 1 teasp fancy schmancy dijon mustard (I use grey poupon or Maille)
  • Dash salt + pepper

Mix all ingredients in a bowl, form 2 patties, store patties in fridge for an hour. Spray non-stick pan with PAM and cook patties approx. 8 minutes per side. Serve with a dollup of cucumber dill sauce (recipe below).

THE SAUCE...

  • 1/4 cup fat free sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon chopped fresh dill
  • 1/2 cup finely chopped cucumber
  • Salt & Pepper to taste

Mix everything together, cover and chill
