The taco salad is always a hit in the Schilling kitchen! It takes about 15 minutes to prepare and most of the ingredients are readily available in the fridge or pantry. You can look at the picture and figure out how to throw it together but I’ll take you through the steps.
Ingredients (per salad, except the beef)
1 lb. lean ground beef, cooked w/ 1 tbsp Southwest Chipotle Mrs. Dash and 1/2 tsp chili powder (use a heaping 1/2 c per salad–makes 3-4 salads)***
2 cups mixed greens (washed/dry)
1/4 c Colby Jack shredded cheese (or whatever cheese you like)
1/4 avocado, sliced
2 Tbsp plain Greek 2 % yogurt like Fage or Chobani (vs. sour cream)
Any other veggies you want to add
1 handful of tortilla chips
Mix it up! Layer greens, salsa, seasoned beef, cheese, etc… on your salad. The salsa and Greek yogurt mix together for a deliciously creamy salsa dressing. The avocados add color, nutrients, and great flavor (sadly, you don’t see them in my picture–I was eating my salad when I remembered them–ARG). Add the tortilla chips for color and crunch!
***if you don’t want to use lean ground beef, use lean ground turkey or try grilled chicken or shrimp (can even be leftover, just heat with a little olive oil the seasonings).
