Beware: LONG (yet wonderful
) post ahead!
Yesterday I checked the mail like I always do, with gusto (who doesn’t love mail?!), but there was an extra jolt of excitement when I saw a package addressed to ME!
Of course I immediately recognized The Smart Kitchen and couldn’t wait to rip inside to see what delicious surprises were hiding inside… Ta-Da!
(S)ara(h) Bars!!! And I knew which one I wanted to try first… peanuts, banana & honey… yes, please!
They were Deee-licious!! And smelled yummy, too! In fact, they smelled so yummy, that someone else noticed…
OK, OK! But only my last itty, bitty bite, because I had already gobbled up the rest
(Anytime K-dizzle smells peanut butter, she thinks it’s for her… silly pup!)
Thanks SO much, Sarah! I look for to enjoying all the wonderful flavors you sent me over the next couple days… if they last that long without me inhaling them
The snack held me over while I made dinner… another recipe out of The Real Food Cookbook .

Like I said before, these ingredients are super simple, whole foods, which makes me think they will lack flavor, but they 2 recipes I have made so far have been OuTsTaNdInG! Last night’s dinner was no exception…
Kale & White Bean Soup
Gather ingredients…
1 qt chicken broth, 4 cups cooked cannellini beans, 1/2 onion, 1/2 bunch kale, 4 Italian chicken sausages, salt & pepper to taste (butter NOT necessary… it was listed, so I got it out, but then never used. Weird).
Chop up 1/2 onion and 1/2 bunch of kale (with stems removed).
Allow eyes to finish watering…
Cut up sausages into bite size pieces…
and put in a medium pot with 1/2 cup of chicken broth over medium heat. Cook for 10 minutes.
Meanwhile, put 2 cups of beans in blender with 1 cup of chicken broth. Blend.
After the sausages have been cooking about 10 minutes, add onions, salt and pepper. Cook for additional 10 minutes.
Inhale the amazing aroma!
Add the remaining broth and bring to a boil.
Reduce to simmer and add kale. Cover and cook for 5 minutes, stirring occasionally.
Then add remaining beans and bean puree…
Cook for 5-10 more minutes until heated through, then enjoy!
I served Hubbs’ with 2 grilled cheeses… CABOT cheese of course…
because I was afraid whether he would like the soup or not, but he REALLY enjoyed it! Even with me rambling off the health benefits of kale, he said the flavors were fantastic! That’s a HUGE compliment coming from Hubbs.
The soup was REALLY tasty… I strongly recommend trying this on a cold night!
Then I finished up the night with a glass of wine, a fire, my favorite candle and my pup (Hubbs was busy kegging beer!)
…And that concludes my longest post EVER!!!
