Roasted Pumpkin Seeds

I honestly cannot remember the last time I carved a pumpkin.

1465 Having lived in apartments for the past ten plus years I never had a reason to decorate my doorstep with carved pumpkins.

But now that we live in the burbs with zillions of kids as neighbors, we needed to make our front porch more halloweenesque!

Does one normally have to draw a line to cut the top open?

1467 I did.

And for some reason I was terrified of cutting it open.

1472 But I eventually did.

1474 Really the main motivation for carving this pumpkin was being able to roast the seeds!

1480 Roasting pumpkin seeds is also an activity that I have not partaken in the past several years.

Most likely because roasting seeds requires using an oven, and I associate an oven with baking. And we all know I can’t don’t bake!

After scooping out the seeds I was disappointed to see how few there were.

1486 Maybe 3/4 a cup?

Good thing I had another pumpkin!

1491 Time to rinse the seeds!

1497 Once I rinsed all (or most of ) the pumpkin goo off, I laid the seeds on paper towels to dry.

1506 Only to learn that wet pumpkin seeds stick to paper towels!

1507 Whoops. I had to pick a lot of them off.

I decided to make two different batches (3/4 cup each) using different flavors.


For batch #1 I used:

  • 1/4 tsp Kosher salt
  • 1/4 tsp garlic powder
  • 1/4 tsp smoked paprika

1513 Batch #2 was:

  • 1/4 tsp table salt
  • 1/4 tsp cayenne pepper
  • A sprinkle of fresh parmesan cheese

I roasted both batches for 15 minutes at 350.


My favorite?

The garlic and smoked paprika!


The cayenne/parmesan seeds didn’t turn out spicy enough and I loved the combination of garlic and smoked paprika.


I can hardly wait to roast more next Halloween!

Carving the pumpkins again, on the other hand, is something I am in no rush to do.


I remember carving pumpkins to be a really fun project. Sitting around the table with the family, throwing seeds at each other and trying to come up with a creative face.

Not today though.

For some reason I found it to be very tedious and I had no patience!

Similar to Nylah not having any patience when I was trying to take her photo with the pumpkins.

Belly update time!

26 weeks and counting.

2620 I decided to throw in a front view as well.

2624 I am carrying low and straight out front at this point.

Two more weeks until I reach my third trimester! Oh my, where did the time go?!

Our nursery is still pink from the previous owners and empty. We have a lot of work to do the next three months!

I’ve still been walking several times a week and doing yoga. I haven’t been to the gym that much because I have been enjoying the beautiful weather and fall foliage! The gym is for rain and winter.



I couldn’t be happier that we bought a house so close to the mountains.

Some may refer to them as hills based on their size, but technically they are mountains.
