Roasted Chickpeas. Healthy Snacking.

I love chickpeas in all forms.   A neighborhood restaurant we frequent actually serves a hummus platter with falafel, it makes me laugh chickpeas with chickpeas but I love it!  Adding chickpeas to salads has always been a favorite of mine and now you can add roasted chickpeas to the list! So simple and addicting. 
The recipe below is super simple.  If you don't feel like a spicy snack, trade out the chipotle season for simple salt and pepper, or go Indian with a little garam masala.

Ingredients:
2 16 oz. cans Chickpeas (no salt added)
Olive Oil
3/4 Tbsp Southwest Chipotle Seasoning by Mrs. Dash

Directions: 
Preheat the oven to 400 degrees. Rinse chickpeas and lay on paper towels to dry on the counter. Let sit for 5-10 minutes, use more paper towels to pat the chickpeas dry.  Remove any shells that may have come off.  Place dried chickpeas on an unlined cookie sheet and lightly coat/spray with olive oil.  Bake for 40 minutes, turning every 10 minutes.  Let sit for another 20-30 minutes with the oven off to allow them to get a bit more crispy.  In a small to medium bowl pour the seasoning, place the chickpeas on top and stir.  Coating evenly.  Snack away!


Rinse.


Spread out on a cookie sheet, ready to bake.


A simple seasoning.


Bet you can't just grab one handful.
