Roasted Butternut Squash Pizza with Caramelized Onions and Gorgonzola

Doesn’t that title just make your mouth water?

I haven’t had pizza in about two weeks, so I was WAY past due for this masterpiece. I actually think it might be a crime to go two weeks without eating pizza…


Actually, this was the most random pizza I have ever made. I pretty much just started throwing ingredients together and hoped that it would come out to something respectable.

I had a half a butternut squash hanging out in the fridge next to a ball of pizza dough. Both of them HAD to be used ASAP or they would end up in the trashcan.

I hate wasting food, so butternut squash pizza was on the menu!


Well, my cheapness paid off because this was one of the most delicious things I have ever put into my mouth. It was seriously that good.

I will spend $29.99 a pound on goat cheese, but I am too cheap to let half of a butternut squash go to waste. Go figure…


  • 1/2 of a butternut squash (cut into 1/2 inch cubes)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 onion, sliced
  • 2 tablespoons fresh thyme, chopped.
  • Pizza dough (I used my honey wheat dough )
  • 1/2 cup mozzarella, shredded
  • 2 tablespoons Gorgonzola, crumbled


  1. In a bowl, toss the butternut squash with the olive oil, salt, and pepper.
  2. Roast the squash in a preheated 350* oven for 40 minutes. Set aside.
  3. Increase the temp to 500* and preheat a pizza stone.
  4. In a medium non stick skillet, melt the butter.
  5. Caramelize the onions for 20-30 minutes, until golden brown.
  6. Roll out the dough.
  7. Place the dough a pizza stone and layer the dough with the squash, caramelized onions, and both cheeses.
  8. Bake in a preheated 500* oven until golden brown on top, about 5-10 minutes.
  9. Top with fresh thyme.
