Roasted buckwheat groats with mushrooms and prunes

I hope you had a fabulous weekend. We had a pretty busy one. Well, some of us had, others did this as you can see:
We have started Christmas shopping and decorated our house to get into the Holiday spirit a little bit earlier than usually.
I have a question for you:
How many of you have things in your pantry that your don’t eat anymore and they are just sitting there taking up space?
I used to eat dried prunes a lot!!!and thanks to Costo I still have few bags of them left. They were helping me for a while with my stomach issues but things changed and I don’t eat them anymore. Since my Monday morning was rushed I didn’t prepare anything for dinner tonight for Tom and myself. Besides this time of the year I tend to clean up stuff (quite ironically). So this is what came up for our fix dinner: Roasted buckwheat groats with mushrooms and prunes
1 c of cooked buckwheat
1c dried mushrooms (soaked for 1 h in water)
a handful of fresh parsley
2-3 tbsp Greek Yogurt
salt & pepper
1-2 tbsp olive oil
Start to stir fry mushrooms and onion, let it simmer for a few minutes. Add salt and pepper and when ready add chopped prunes. Mix everything with buckwheat and place in an ovenproof dish. Spread Greek yogurt+parsley on top and bake for around 20-25 min in 350F. It was delicious so give it a try.
