As most of you already know, I’m a huge breakfast person. It’s the meal that I look forward to the most each day.
I just do not understand how anyone could possibly skip it. I’d just die!
Well, that’s obviously an exaggeration, but you get my point…
I love breakfast.
Naturally, I was really happy yesterday when MT suggested that we have breakfast for dinner.
Since it was New Years and all, I decided to go all out.
We had pancakes (gluten-free because of MT’s intolerance), eggs (mine was more of a veggie scramble using one egg and two egg whites sprinkled with nutritional yeast), roasted potatoes, and turkey bacon (well, real bacon for MT).
I have eggs all of the time for dinner, but it had been awhile since pancakes were on the dinner menu.
Even though the batter looked kind of funky, the gluten-free pancakes were actually really good. I definitely prefer traditional ones or even buckwheat or whole grain pancakes though.
MT said that we should do breakfast for dinner more often- just another reason why he’s my perfect match!
