Recipes: Maple Grilled Plum French Toast & Spiced Italian Plum Chutney

I was, well, still am on a plum kick recently, and they’ve become my favorite fruit for cooking. I hate that I don’t have much to say today, but it’s going to be a busy one…three exams in the next two weeks. One of which is in a couple of days! Happy Wednesday and enjoy!!!
In a small mixing bowl, add together the almond milk, egg whites, and the vanilla. Whisk until blended well.
In a casserole dish, lay out the slices of bread and pour the egg and mill mixture over the top until the bread is covered. Allow the bread to soak for 2-3 minutes.
As normal, grill the bread over medium-high heat, on each side, for about 3 minutes or until the egg is cooked.
Over a medium-low heat, grill slices of black plum sprinkled with the desired amount of cinnamon and ground anise until soft and slightly browned.
Top the bread with the slices of plum and drizzle with maple syrup.
My second recipe is a quickie. I discovered these beauties one day running through the grocery store for dinner supplies.
I decided that it’d be a great idea to have a chutney for the vanilla-butternut biscuits I was going to make. (Which, I’m sorry to report, were made, in a supply-less emergency, using Bisquick. GASP!)
