Recipe: Salad Formula

August, for me, is a good time to run on auto-pilot. I'm usually in and out, getting ready for vacation or returning from vacation, so I like having a formula on hand for a week of simple salads.

Therefore, I give you my salad formula. Pick one or two ingredients from each group and combine.

Leafy greens: spinach, arugula, frissee, dandelion greens, red leaf lettuce, Boston lettuce,

Fruit: tomatoes, plums, nectarines, grapes, strawberries, peaches, blueberries, figs, raisins, apples, avacado

Protein: slivered almonds, cashews, peanuts, walnuts, pecans, pistachios, macadamias, pumpkin seeds, sunflower seeds, bacon, shredded chicken, cheese, canned tuna, pickled herring

Alliums (finely chopped): scallions, red onion, shallots, garlic scrapes, leeks

For a dressing I combine an oil, and acid, and some flavors. I usually use one part oil to two parts acid, pour everything into a jar, cover with a lid, and shake vigorously.

Oils: olive, sesame, hazelnut, pistachio, peanut, sunflower seed

Acids: lemon juice, lime juice, grapefruit juice, balsamic vinegar, wine vinegar, apple cider vinegar

Flavors: mustard, honey, soy sauce, minced ginger... raid your condiments and see what looks good.

Toss and enjoy!
