Recipe Mashup # 2

Welcome to the second edition of Recipe Mashup!

This week I experimented with recipes that I found on Pinterest. What would I do without it! When looking for a recipe for next week's meal plan, I chose the recipe based on the picture. Does it look good? I then scroll through the ingredients. Do I have everything that the recipe calls for? And of course, if a recipe contains ingredients which are unhealthy, I skip to the next. I'm curious... Where do you find your recipes? Blogs? Websites? Cookbooks?

This week, I had a special assistant helping me prepare and cook this week's meals. K helped me cook the mexicain quinoa recipe and she made the french toast muffins. All by herself!!

  • Fried rice  - better than takeout!
  • Mexican quinoa  - delish!! (by the way, even my daughter wanted some for her lunch!)
  • French Toast muffins  - these weren't actually for me. They were just too dense. I like my muffins a bit more fluffy :)
