This is my mom’s recipe for Vegetable Chili. It’s dense and flavorful; everything a chili should be. You could substitute the bulgar in this recipe for the meat of your choice, but I don’t think you’ll want to after trying the original :)
1 c raw bulgar 1 c tomato juice Bring juice to boil; soak bulgar 15 min 4 garlic cloves, crushed 1 1/2 c onion, chopped Saute in 3 tbsp olive oil 1 c celery, chopped 1 c carrots, chopped 1 c green pepper, chopped 1 c red pepper, chopped 1 tsp cumin 1 tsp basil 1 tbsp chili powder Salt and pepper, to taste Add to above; cook til aldente. 2 c chopped tomatoes (28 oz can) Juice of 1/2 lemon 3 tbsp tomato paste 3 tbsp dry red wine Dash cayenne 63 oz kidney beans Combine with above; heat together
Bring juice to boil; soak bulgar 15 min
Saute in 3 tbsp olive oil
Add to above; cook til aldente.
Combine with above; heat together
