So, I would like to start off and say this… I had a HUGE post written and it deleted itself. So all of my “wittiness” is going to have go unsaid in this post. Because why? I’m not retyping it. UGH! I need to stop typing in my WP post-editor. Now, the it’s left with the bare minimum. SORRY! But, please… enjoy yourself some DELICIOUS KALE PESTO!
Tonight, I found myself with a bunch of kale and I didn’t want to make chips… but I created something even *gasp* BETTER!
Easy Kale Pesto
Recipe type: Entree

Add all of the ingredients to a food processor and blend until smooth. Serve as desired.
Leftover pesto? Consider freezing in an ice tray to have for future use (and preserve the pesto all at the same time).
You can eat and serve yours as desired. I opted for a spaghetti squash. Yes, I ate it straight out of the shell. YUMMY!
Leftover Pesto: What to do?
My mom taught me this trick. If you have leftover pesto (or any sauce for that matter), freeze it in an ice tray.
This way, you can preserve it and not waste it, but you also have it in the future for convenient and easy meals. Just pop out a few squares of frozen pesto, thaw, and use in the future. It’s that simple.
